Ingredients
For 2 servings
- 1 pack Luya Organic Chunks Simply Natural (175 g)
- 1 small onion or shallot, finely chopped
- 200 g mushrooms
- 1 red chilli pepper
- 4 gherkins
- 1 dl vegetable stock
- 4 dl soya cream or coconut milk
- 1 tbsp cornstarch or flour
- paprika, salt, pepper
- Parsley to garnish
Preparation
1. Prepare the vegetables
Finely dice the onion and slice the mushrooms. Cut the chilli peppers into cubes or strips. Finely chop the gherkins.
2. Fry Luya
Dust the Luya lightly with cornflour or flour. Place in a hot frying pan with a little oil and fry over a medium heat until the Luya chunks are golden brown all over. Remove the roasted Luya chunks from the pan.
3. Prepare the sauce
Leave the pan on the hob, but reduce the heat, add a little oil and sauté the diced onion for 5 minutes. The onions should be translucent but not browned. Now add the mushrooms, increase the heat slightly and sauté for another 8 minutes. The mushrooms may take on a little colour. Then add the strips of chilli pepper and sauté for a further 3 minutes. Then add 2 teaspoons of paprika spice. Mix 1 tablespoon of cornstarch with a little soya cream. Then add the stock, the cornstarch mixture and the soya cream and simmer for 5-10 minutes. Just before serving, add the chopped gherkins and stir again briefly.
4. Serve
Flavour the sauce, add the Luya and simmer briefly so that everything is really hot. Serve immediately and garnish with a little parsley. Serve with pasta or wholegrain rice. En Guete!
