What is the idea behind Luya?
Not only did we want to develop a tasty and juicy plant-based food, we also wanted to actively tackle the issue of food waste. Luya contains 60% organic okara. Okara is a valuable by-product of soya processing and is unfortunately often thrown away. We use it as an important ingredient in our products - so we not only produce a high-quality, nutrient-rich product but also avoid food waste.
How is Luya produced?
Organic okara and organic chickpeas are mixed together and processed into luya using a patented fermentation process. After fermentation, luya is cut into the desired pieces and pasteurised. Our marinated products are then flavoured.
Where do you make Luya?
Luya is made entirely by hand in Switzerland in a former chocolate factory in Bern Bümpliz.
What is the meaning of the name Luya?
"Luia" is a tributary of the Zambezi River. As our idea is very much centred around the use of tributaries for food processing, the Luia River was a good symbol for this. Only the i then became a y. Somehow not logical, but still beautiful.
What is Okara?
Okara is a by-product of tofu and soya milk production. Only 500 grams of tofu or ½ litre of soya milk is produced from 1 kilogram of soya. We use the remaining 500 grams of okara as a valuable and delicious food for the first time.
Where does the okara and the other ingredients come from?
Our organic Okara comes from Switzerland based on soya beans from Italy and Switzerland and the organic chickpeas come from an Italian co-operative.
What is a fermentation process?
Fermentation is one of the oldest ways of processing food. Well-known foods such as bread, cheese, beer, soya sauce and sauerkraut are all produced by fermentation. Fermentations can be used to preserve food, enhance and change the flavour or even improve the texture. Fermentations are therefore a truly miraculous tool!
Is Luya organic?
Yes, we have selected all ingredients so carefully and sustainably that we have been awarded the Bio Knospe label. We are particularly proud of this.
Is Luya vegan?
But of course. Luya is not only 100% plant-based, it also fulfils all the criteria of a vegan food.
Why does Luya taste so delicious and juicy?
The fact that Luya ends up so juicy and delicious on your plate is due to our patented production process. Structure, texture and the quality of the fermentation process make this possible. We don't want to reveal any more.
