Okara is the nutrient-rich (but often neglected) pulp of the soybean. In Switzerland alone, 2000 tons are produced each year as a byproduct of soy milk and tofu production – much of it ends up as animal feed, biogas, or waste. We think that’s a waste!

We rescue this valuable raw material and integrate it into a holistic production process. Using natural fermentation, we transform Swiss organic Okara together with whole organic chickpeas from an Italian cooperative into the delicious superfood Luya!

The Luya story

Luya was founded in 2021 by Flavio, Tobias and Mike and is the result of shared passion, vision and a good dose of nerdiness. Nina joined in 2024 and completed the founding team. Find out exactly how it came about here.

  • 2019

    In 2019, Tobias, a food scientist, and Mike, a trained chef and microbiologist, met at the University of Applied Sciences in Bern (HAFL). Both were driven by the question of how to make use of byproducts from the food industry. It quickly became clear that okara, through traditional fermentation, could be transformed into a delicious, juicy, and fully plant-based source of protein. The first prototypes were born.

  • 2020

    Flavio, a financial consultant, passionate foodie and hobby fermenter, met Mike and Tobias by chance during the coronavirus pandemic. The first joint projects, from which Luya gradually matures, are born as early as the summer. The first taste test takes place at a Zurich Christmas market in the same year - with great success.

  • 2021

    In 2021, the "they" became "we" and with feedback from various chefs, we quickly took our products to the next level. Success didn't take long - by summer, the first restaurants wanted to include our products on their menus. A company was needed: Luya was born.

  • 2022

    In April 2022, we left the HAFL laboratories behind and moved into our own production facility in a former chocolate factory in Bern-Bümpliz. By June, the first Luya products had launched in Swiss retail stores.

  • 2023

    Step by step, we’re growing our production, introducing new products, and bringing more people on board with Luya.

  • 2024
