Ingredients
for 4 Portions
- 1 pack Luya Chunks Simply Natural (175g)
- 1 small onion or shallot, finely chopped
- 200 g mushrooms
- 1 dl vegan white wine
- 1 dl vegetable stock
- 2.5 dl soy cream or coconut milk
- 1 tbsp cornflour or flour
- Salt, pepper, lemon juice to taste
- Parsley to garnish
Preparation
1. Prepare the vegetables
Finely dice the onion and slice the mushrooms.
2. Fry the Luya
Dust the Luya Chunks lightly with cornflour or flour. Place in a hot frying pan with a little oil and fry over a medium heat until the Luya Chunks are golden brown all over. Remove the roasted Luya Chunks from the pan.
3. Prepare the sauce
Leave the pan on the heat, but reduce the heat, add a little oil and sauté the diced onion for 10 minutes. The onions should be translucent but not browned. Now add the mushrooms, increase the heat slightly and sauté for another 10 minutes. The mushrooms may take on a little color. Deglaze with the white wine. Reduce the white wine by at least half. Then add the stock and soy cream and reduce again for 5-10 minutes.
4. Serve
Season the sauce to taste, add the Luya Chunks again and simmer briefly so that everything is really hot. Serve immediately and garnish with a little parsley. It goes well with rösti, pasta, seasonal vegetables or simply a fine piece of bread.
