Zurich-style Luya

Ingredients

For 4 servings

  • 1 pack Luya Organic Chunks Simply Natural (175g)
  • 1 small onion or shallot, finely chopped
  • 200 g mushrooms
  • 1 dl white wine
  • 1 dl vegetable stock
  • 2.5 dl soya cream or coconut milk
  • 1 tbsp cornstarch or flour
  • Salt, pepper, lemon juice to flavour
  • Parsley to garnish

Preparation

1. Prepare the vegetables
Finely dice the onion and slice the mushrooms.

2. Fry Luya
Dust the Luya chunks lightly with cornstarch or flour. Place in a hot frying pan with a little oil and fry over a medium heat until the Luya chunks are golden brown all over. Remove pieces from the pan.

3. Prepare the sauce
Leave the pan on the hob, but reduce the heat, add a little oil and sauté the diced onion for 10 minutes. The onions should be translucent but not browned. Now add the mushrooms, increase the heat slightly and sauté for another 10 minutes. The mushrooms may take on a little colour. Deglaze with the white wine. Reduce the white wine by at least half. Then add the stock and soya cream and reduce again for 5-10 minutes.

4. Serve
Flavour the sauce, add the Luya again and simmer briefly so that everything is really hot. Serve immediately and garnish with a little parsley. Serve with rösti, pasta, seasonal vegetables or simply a fine piece of bread.
