{"id":3964,"date":"2024-03-08T11:05:31","date_gmt":"2024-03-08T10:05:31","guid":{"rendered":"https:\/\/luya.bio\/?post_type=recipes&#038;p=3964"},"modified":"2025-11-24T12:52:34","modified_gmt":"2025-11-24T11:52:34","slug":"red-weekday-curry","status":"publish","type":"recipes","link":"https:\/\/luya.bio\/en\/recipes\/rotes-weekday-curry\/","title":{"rendered":"Red Weekday Curry"},"content":{"rendered":"<div class=\"wp-block-columns\">\n<div class=\"wp-block-column ingridients\">\n<h2 class=\"wp-block-heading has-headline-small-font-size\"><strong>Ingredients<\/strong><\/h2>\n\n\n<p class='portions-text'>For <span class='value'>2<\/span> servings<\/p>\n\n\n\n<ul class=\"wp-block-list\">\n<li>1 pack <strong>Luya Organic Chunks Simply Natural <\/strong>(175g)<\/li>\n\n\n\n<li>250g snow peas (alternatively green beans)<\/li>\n\n\n\n<li>One piece of ginger, peeled and finely chopped<\/li>\n\n\n\n<li>2 cloves of garlic, finely chopped<\/li>\n\n\n\n<li>1 onion, finely chopped<\/li>\n\n\n\n<li>\u00bd chilli, cut into fine rings<\/li>\n\n\n\n<li>1 tbsp coconut oil<\/li>\n\n\n\n<li>1-2 tbsp red curry paste<\/li>\n\n\n\n<li>250 ml coconut milk<\/li>\n\n\n\n<li>1 lime<\/li>\n\n\n\n<li>1 tsp soy sauce<\/li>\n\n\n\n<li>Optional: coriander and Thai basil to garnish<\/li>\n<\/ul>\n<\/div>\n\n\n\n<div class=\"wp-block-column\">\n<h2 class=\"wp-block-heading has-headline-small-font-size\"><strong>Preparation<\/strong><\/h2>\n\n\n\n<p><strong>1. Prepare vegetables and Luya<br><\/strong>Fry the Luya ckunks in a little coconut oil over a medium heat for 5-6 minutes and set aside. Blanch the snow peas in salted water for approx. 2 minutes. They should still be crunchy. Drain and rinse with cold water.<\/p>\n\n\n\n<p><strong>2. Prepare the curry<br><\/strong>Saut\u00e9 the onions, ginger and garlic in a little coconut oil for approx. 2 minutes. Add the chilli and curry paste and fry for a further 2 minutes. Then deglaze with a little water. Add the coconut milk, juice of \u00bd a lime and soy sauce and simmer for 10 minutes on a low heat. Add the snow peas and Luya slices and cook for 5 minutes. Flavour with salt.<\/p>\n\n\n\n<p><strong>3. Serve<br><\/strong>Serve the finished curry in deep plates. Garnish with coriander, Thai basil and lime wedges. Serve with basmati rice.
